Recipe Ideas

Kale Chips

Sauce Magazine just shared a recipe for kale chips. If you haven’t make these before, do. They are wonderful.

Braised Greens with
Garlic and Sun-dried Tomatoes

Ingredients

  • ¼ – ⅓ lbs chard, spinach or kale, sliced into strips
  • About 1 tbsp olive oil
  • 3-4 garlic cloves, diced
  • 4 chopped sun-dried tomatoes (soak in warm water for about 10 minutes)
  • ½ cup del Carmen vegetable broth
  • About ½ tbsp lemon juice

Preparation

Add olive oil and garlic to a skillet on medium heat, saute until garlic is translucent, add the sun-dried tomatoes, saute until tomatoes start to soften. Add the greens and stir as it wilts down (1 to 2 minutes). When the greens have wilted add the chicken broth and simmer until most of the liquid is gone (5-10 minutes). Add a dash of lemon juice and and serve on the side.

Tofu with Grilled Orange Chipotle Sauce

Ingredients for Grilled Orange Chipotle Sauce

  • 2 oranges, halved
  • Sorghum, as needed
  • 1 tbsp Sandhill Farm mustard
  • 1 chipotle pepper
  • 1 tbsp of olive oil
  • 1 garlic clove

Ingredients for Tofu and Veggies

  • 1 package tofu, excess water removed by pressing or patting dry, cut into ¼” thick pieces, any preferred style (triangles, strips, squares, etc)
  • 1 medium onion, sliced
  • 1 cup of Hilty green beans, drained
  • 1 Tbsp honey
  • Salt & Pepper to taste
  • Smoked Gouda (or any available Marcoot cheese) as needed
  • Gringo George tortilla chips

Preparation

Grease a skillet (oil, honey or lard). Spread a little sorghum on the cut side of the orange halves and grill, cut side down, on a skillet over medium heat until brown (about 3-4 minutes). Remove the oranges and allow them to cool

Drizzle honey salt and pepper over the onion and green beans and grill over medium-high heat until onions are browned.

Once cool, juice the oranges and add to a food processor. Add mustard, chipotle, olive oil, and garlic. Puree until smooth (add more olive oil if needed). Pour the mixture into a small baking dish.

Lay the tofu slices in the sauce and marinate 20 minutes.

Grill the marinated tofu about 4-5 minutes per side.

Lay tortilla chips on the skillet, top with green beans & onion, then tofu, the excess marinade and slices of cheese. Cover and heat over low heat until cheese melts (about 1 minute) then serve.

Recipe Ideas

Tasty, But Fake, Sausage Gumbo

Ingredients

  • ¼ cup vegetable oil
  • ⅓ cup Maude’s Market whole wheat flour
  • ½ cup diced onion
  • ½ cup diced carrot
  • 1 cups thinly sliced sausage (about 3-4 sausages)
  • 4 Hilty canned tomatoes, chopped
  • 1 container of del Carmen vegetable stock (about 64 oz)
  • 4 bay leaves
  • 4 garlic cloves finely chopped garlic
  • 2 teaspoons Adventures in Spice Cajun Seasoning
  • salt, to taste
  • 2 cups of cooked rice

Preparation

Combine oil and flour in a large stock pot. Cook over medium-high to high heat, stirring constantly, until mixture turns the color of milk chocolate, about 20 minutes. Watch carefully, preventing the mixture from burning. Add onion and carrot, and cook over medium-high heat until tender. Stir in sausage and tomatoes. Combine well. Pour in vegetable stock. Add bay leaves and garlic. Bring to boil, then add Cajun Seasoning. Reduce heat to low and simmer 20 to 30 minutes. Adjust seasoning with salt to taste.

Sever on top of cooked rice.

Recipe Ideas

Simple Steamed Sweet Potatoes

Ingredients

  • 1.25 lbs sweet potatoes, diced ½ inch pieces
  • ½ medium onion, sliced
  • 2-3 garlic cloves, chopped or pressed
  • Salt and pepper, to taste
  • 3 tbs olive oil
  • 2 tbs chopped pecans
  • 2 tbs fresh chopped rosemary or sage

Preparation

Fill bottom of steamer with about two inches of water. Once boiling steam the sweet potatoes and onions for about 6-8 minutes.

Transfer to a bowl and immediately toss with the remaining ingredients.

Recipe Ideas

How to Prepare Dry Beans

Soak the beans (about 1 part beans to 3 parts cold water) for 6 hours or overnight. The longer you soak beans, the more water they absorb, which helps them cook faster and also helps to dissolve the starches that cause intestinal discomfort.

Drain the soaked beans and place them in a cooking pot with fresh water (about 1 part bean to 3 part water).

Bring the beans to a boil, and then lower the heat and simmer for 45 to 90 minutes, or until the beans are tender. Check the beans every so often after the first 30 minutes. If you are flavor to your beans with vinegar, tomatoes, salt or other acidic spices and flavors, add them towards the end of the cooking process.

Serve beans hot or cool on the stove and then place in the refrigerator.

Summer Salad

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon vinegar (balsamic, red wine, or other favorite vinegar)
  • ⅛ cup cilantro or parsley, chopped
  • To taste, salt and pepper
  • ½ pint cherry tomatoes, halved
  • 1 cucumber
  • 3 banana peppers (
  • ½ cup cooked black beans, chilled

Mix the vinegar, oil and chopped herbs, salt and pepper in a bowl. Mix in tomatoes, cucumbers, and peppers. Scoop the black beans into another bowl. Top the mixture from the other bowl.

Braised Eggplant

Served at room temperature or colder, this is a great side dish for your grilled meats and veggies.

Ingredients

  • 4 tablespoons olive oil
  • 1 large or 2 small eggplant, ¾ inch cubes
  • 1 onion bunch, each onion halved and thinly sliced
  • 1 bunch of garlic scapes, chopped very small
  • 2 bell peppers, cored & cut into 1/2-inch strips
  • ¾ teaspoon ground cumin or turmeric
  • 2 large tomato, diced
  • Pinch of sugar
  • 2 tablespoons lemon juice
  • To taste, salt & pepper
  • 1 tablespoon fresh cilantro, chopped

Directions

  • Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add cubed eggplant and sauté until golden (about 5 minutes). Transfer eggplant to plate.
  • Add 2 tablespoons olive oil to same skillet and heat over medium-high heat. Add onions and sauté until onions are tender and golden, (about 5 minutes).
  • Add bell peppers, garlic scapes, and cumin or turmeric to skillet and sauté until peppers are almost tender (about 5 minutes).
  • Add tomatoes and sugar. Boil until mixture thickens slightly (about 5 minutes).
  • Add eggplant; reduce heat and simmer until vegetables are tender (about 5 minute).
  • Stir in lemon juice, salt and pepper.
  • Transfer to bowl and cool to room temperature.
  • Sprinkle with cilantro.
