Mushrooms and Spinach
Sautéed in Red Wine

Ingredients

  • 2 tsp Olea olive oil
  • Pinch of Adventures in Spice Insanity Ridge Picante Salsa
  • 2 cups shiitake mushrooms, cleaned of visible dirt and sliced
  • 2 garlic scapes, minced
  • 3 to 4 large handfuls of fresh spinach (about 6 oz)
  • ¼ cup red table wine (plus whatever you intend to drink)

Preparation

Heat oil in a large skillet over medium heat. Add garlic and sauté one minute. Add mushrooms and cook five to eight minutes, until mushrooms are tender. Add red wine. In a separate glass take a sip of wine. Add Insanity Ridge Picante Salsa and bring to a simmer. Add a handful of spinach, allow it to wilt, stir, repeat until desired amount is added. Salt and pepper to taste and serve.

Turnip or Cucumber Refrigerator Pickles

Ingredients

  • 1 bunch of turnip roots OR 1 lbs of cucumber
  • 4 cups white vinegar
  • 2 cups water
  • 6 tablespoons course salt
  • ½ cup sugar
  • ¼  to ½  cup chopped garlic cloves
  • ¼ to ½  cup fresh thyme, chopped or sprigs

Preparation a non-aluminum bowl mix the vinegar, water, salt and sugar until dissolved. Add garlic and herbs. Pour over chopped vegetables in a big jar or bowl that will fit, covered, in your refrigerator. Pickles will be ready in 3 days.

Recipe Ideas

Baked Salmon with Irish Gooseberry Sauce

Serve this recipe with lightly sauteed mushrooms and greens on the side.

Ingredients

  • 1 small salmon fillet, thawed
  • Salt & pepper to taste
  • Olive oil, as needed
  • Dash of dry white wine
  • ¼ Onion, sliced

For the sauce:

  • 2 tablespoon of plain Greek yogurt
  • 2 tablespoon lightly sweetened with honey or sugar, cooked gooseberries
  • Dash of Ozark Forest elderflower cordial

Preparation

Heat the oven to 350°F.

Rinse the fish season with salt and pepper.

Place foil on a baking sheet and brush with olive oil. Put the fish in the middle, add the onions, splash with wine & wrap the fish in the foil. Bake in the middle of the oven for 10 minutes, then remove and leave to cool in its foil.

For the sauce, put the yogurt and gooseberries in a bowl and mix, adding elderflower cordial to taste. Season with salt and pepper, and more sweetener, if needed.

Serve the sauce on top of the fish.

Sharing the bounty: CSA patrons enjoy a different kind of agriculture

Some entrepreneurs have linked the idea of grocery shopping with a CSA. On the city’s south side, Maude Bauschard runs Maude’s Market, a cozy shop of less than 600 square feet on Virginia Avenue that combines storefront retail with the CSA concept.

Lunching on fruit among shelves full of everything from moisturizing cream to maple syrup, Bauschard said that Maude’s is unusual in that it sells CSA subscriptions but also takes walk-in customers off the street.

“Everything is locally produced except for the citrus that I’m eating right now,” she said.

Bauschard noted that the CSA concept has existed since the 1970s but has more recently come into its own. She said it exploded in recent years but seems to have leveled off a bit.

“For the customers, it is a great thing because they are pretty much guaranteed to get some sort of crop or product,” she said of Maude’s combined CSA dynamic. “We had a major drought last summer and it was hard across the board. But I was able to find various products that did survive. At the same time, the customer is able to support multiple small family farms.”

Maude’s CSA offers a weekly supply of produce, meat, a staple and a “treat.” There are also pork-free, gluten-free and vegetarian options available.

She said CSAs help to boost demand for local crops so that land isn’t used to produce corn or soybeans for animal food or fuel.

Carmelita Nunez, a Maude’s subscriber since the former moved to Dutchtown two years ago, said she thinks the food is better when it hasn’t been artificially ripened or bred for size.

“When things aren’t treated to grow larger, they taste different,” said the 38-year-old. “If something gets too big, it loses its flavor and gets kind of mealy. When things are allowed to just grow as they naturally would, the taste is more condensed and sweeter.”

Simple Steamed Sweet Potatoes

Ingredients

  • 1.25 lbs sweet potatoes, diced ½ inch pieces
  • ½ medium onion, sliced
  • 2-3 garlic cloves, chopped or pressed
  • Salt and pepper, to taste
  • 3 tbs olive oil
  • 2 tbs chopped pecans
  • 2 tbs fresh chopped rosemary or sage

Preparation

Fill bottom of steamer with about two inches of water. Once boiling steam the sweet potatoes and onions for about 6-8 minutes.

Transfer to a bowl and immediately toss with the remaining ingredients.

Garlicky Squash Stuffed with Turkey*
Topped with Beets & Gouda

Ingredients

  • Peeled garlic cloves (whole), to taste
  • Olive oil, as needed
  • Squash
  • ½ pound beets, thin & long julienne cut
  • 1 large yellow onion, diced small
  • 1 pound ground turkey (veggie substitute, beans & rice, beans & quinoa, or pressed tofu flavored to your preference)
  • 1 teaspoon chopped sage
  • Pinch of ground nutmeg
  • Pinch of cayenne
  • Salt & Pepper, to taste
  • ¼ cup finely grated Marcoot Heritage cheese
  • ¾ cup grated Marcoot Gouda cheese

Directions

Preheat oven to 350. Combine the garlic cloves and the oil in a small ramekin or oven-safe dish. Place in oven and bake 30 to 45 minutes or until the cloves are starting to turn golden brown in spots. Remove from oven and set aside.

Wash the squash and cut it lengthwise, through the middle. Place the squash halves cut side down onto an oiled baking sheet and place in oven, 25 to 30 minutes or until the squash gives a little when squeezed. Remove from oven, flip the squash so they’re cut side up, and set aside until cool enough to handle.

Steam the julienne beets for 5-10 minutes until soft, and set aside.

Heat olive oil in a large soup pot over medium high heat. Add diced onion and sauté about 3 minutes or until onion has softened a bit. Add ground turkey, herbs and seasonings. Stir and cook until browned. Remove from heat and stir in Heritage cheese. Remove roasted garlic from oil with a slotted spoon and add to mixture. The filling should be a little bit wet to help keep the squash moist when baking.

Brush the squash cavity with a light coating of the roasted garlic oil. Divide the filling evenly among the halves. Top with the steamed beets and the grated Gouda.

Cover and return to oven for 20 to 30 minutes or until cheese is melted and everything is heated through.

Apple Fennel Salad
with Maple Vinaigrette

Vinaigrette

  • ¼ cup olive oil
  • 2 tablespoons maple syrup
  • 2 tablespoons of vinegar
  • 1 tablespoon diced onion
  • Salt & pepper to taste

Mix all ingredients in a bowl and set asside.

Salad

  • 1 apple, sliced thin (approximately ⅛ inch thick)
  • 1 fennel bulbs, sliced very thin
  • ½ cup pecan pieces
  • Vinaigrette

Toss the sliced apples and fennel in vinaigrette. Place on plate alternating apple slice and fennel. Top with pecans and ground pepper.

Recipe Ideas

 

Sauted Hen of the Woods & Shitaki Mushroms

This is be a great side dish to a chicken or an eggplant meal. Consider wilting chopped kale, chard, or collards into the mushroom dish.

Ingredients

  • ½ lbs Sauted Hen of the Woods & Shitaki Mushgrooms
  • 1 ½ tablespoons olive oil
  • ½ onion, sliced thin
  • 2 cloves garlic, chopped fine
  • 2 tablespoons of dry white wine or 1 tablespoon of white balsamic vinegar
  • 2 teaspoons chopped mixed herbs (rosemary, sage, thyme and marjoram are all great with mushrooms)
  • Coarse salt & freshly ground pepper, to taste
  • ¼ cup parsley, chopped

Directions

Gently wipe the mushrooms. Trim and discard any tough stems. (Shiitake stems are great for stocks but are too tough to eat. The very bottom of mushroom clusters like hen of the woods may have a slightly woody layer, so trim it away). Slice the mushrooms ⅛  – ¼ inch thick.

Warm the olive oil over medium high heat in a large skillet. Add the onions, cook 1 minute, and add the mushrooms. Cook, stirring frequently, for 6-8 minutes, until the mushrooms have released their juices and begin to brown.

Stir in the garlic and white wine or white balsamic vinegar, increase the heat to high, and cook about 2 more minutes, until the wine/vinegar has evaporated. Toss in the herbs; stir well and season to taste. Stir in the parsley and serve

Blueberry Elderberry Apple Crisp

 

Ingredients for Filling

  • 24 oz (1.5 lbs) frozen blueberries
  • 10oz Elderberry Cordial
  • 2 tablespoons flour
  • 4 large tart apples, peeled and chopped

Ingredients for Topping

  • 2 cups oats
  • 1 cup sorghum
  • 4 tablespoons flour
  • 8 T Coconut Oil
  • ½ cup pecan pices

Directions

Preheat oven to 350 degrees.

Heat the blueberries in 6 oz of cordial over medium heat until hot. In a separate bowl, whisk 2 tablespoons of flour into remaining 4 oz of cordial. When dissolved, add to heated blueberries.  Stir blueberries constantly until thickened to the consistency of syrup.  Remove from heat.  In large bowl, combine blueberry-elderberry cordial mixture and apples.

Prepare the topping by combining the oats, sorghum and flour in a large bowl.  Add the coconut oil and chopped pecans and stir until well combined.

Pour blueberry-apple mixture into a 9×13 glass dish, sprinkle topping evenly over top, and bake at 350 for 30 to 35 minutes until topping is golden brown.  Let cool for one hour before serving.

Recipe Idea

Ingredients
2 tablespoons olive oil
1 medium onions, peeled and chopped
1 green bell peppers, seeded and chopped
1 red bell peppers, seeded and chopped
1 garlic cloves, peeled and minced
1 (10 ounce) cans Rotel tomatoes & chilies, undrained
1 (29 ounce) cans black beans, drained and rinsed
1 cup whole wheat elbow macaroni
4 cups vegetable broth
1 teaspoon cumin ( or to taste)
sour cream ( garnish)
extra-sharp cheddar cheese, shredded ( garnish)
tortilla chips ( garnish)

Directions
Saute the green and red bell peppers, onion, and garlic in olive oil over medium heat until softened, about 6-8 minutes. In a separate sauce pot, bring salted water to a boil and cook the elbow macaroni according to the package directions. Drain, return to pot, and mix with a little olive oil to prevent sticking. Add broth, beans, and Rotel diced tomatoes and chiles to the onion/bell pepper mixture. Season with cumin and simmer for 10-15 minutes. Just before serving, add cooked elbow macaroni to the soup. Garnish individual bowls of soup with shredded cheddar cheese, crushed tortilla chips and a dollop of sour cream.

  • Hosta, Great Expectations – Puckered heart-shaped leaves have creamy-yellow centers and blue-green margins. White flowers bloom on 2.5’ scapes in midsummer. Height 22″
  • Hosta, Liliaceae ‘Halcyon’ – Heart shaped, smooth, thick gray blue leaves. In summer lavender gray flowers bloom on 18″ stalks. Height: 1.5’ Width: 2’
  • Hosta, Honeybell – Forms a large, loose open mound of oval to heart shaped green leaves. In late summer white sometimes lavender blue flowers bloom on leafy stalks. Height: 2.5’ Width: 4’
  • Hosta, Sharmon – Colorful foliage and attractive flowers will brighten the shady spots of your perennial garden. Height: 22-28″ Width: 28-36″

Part Shade to Full Sun

  • Jethro Tull – A flourish of fluted, golden-yellow petals. Large trumpets bloom from late spring through summer.
  • Ornamental Grass, Red Baron – Upright with bright green and wine red stained tips. It becomes increasingly red as season progresses. Height: 12-24″
  • Phlox, Blue Paradise – This Phlox emerges as cornflower blue in the cooler temperatures of morning. During the heat of the day blue turns to violet, and then back to blue as temperatures fall at night. Height 3-4’
  • Phlox, Bright Eyes – Salmon pink flower with a darker ruby eye. Height: 2-3’
  • Phlox, Laura – A purple bloom with white center. Mildew resistant. Height: 2-3.5’

Full Sun

  • Bee Balm, Coral Reef – Tight, compact mounds of shiny, dark green foliage spangled with gangs of rich lavender-purple flowers. Height: 1-1.5’
  • Bee Balm, Grand Parade – Large flowers, up to 3″ across, are creamy white in warm weather. Constantly in bloom from early summer into fall. Height 20″
  • Black Eyed Susan – Deep gold flowers that bloom up to 3 months over the summer. Height: 3-4’
  • Purple Coneflower – Large purple daisy-like flowers with swept black, reddish purple rays and orange cone centers. Height: 3-4’

 


Recipe Idea

Melon Salad topped with
Cranberry Chutney & Greek Yogurt Dressing

 

Ingredients

  • Plain Greek yogurt, 2 Tbl
  • Honey, 1 Tbl
  • Mint, 4-5 minced leaves
  • Salt & pepper, to taste
  • ½ melon, de-seeded, skinned and sliced very thin
  • Medium cucumber, sliced very thin
  • ½ onion, sliced very thin
  • Marina’s cranberry chutney, 2 Tbl

Directions

Place yogurt, honey, mint, salt & pepper in a bowl and stir.  Add a few drops of water and still until mixture is at ideal consistency. Set aside.

Place cucumber slices on a plate, layer with the onion on top of the cumber, the melon slices on top of the onion. Spoon the yogurt dressing over the salad. Spoon the cranberry chutney over the dressing.

Maude’s Market provides a weekly CSA with locally and sustainably sourced products. She always includes a mix of a starch, some veggies, a canned product, some meat and a treat. Getting her CSA is a great way to have a balanced, locally sourced diet and not have to hunt around looking for different products. Her store is also adorable, and she hires a local artist to decorate the window display.
