Recipe Ideas

Mushrooms and Spinach
Sautéed in Red Wine

Ingredients

  • 2 tsp Olea olive oil
  • Pinch of Adventures in Spice Insanity Ridge Picante Salsa
  • 2 cups shiitake mushrooms, cleaned of visible dirt and sliced
  • 2 garlic scapes, minced
  • 3 to 4 large handfuls of fresh spinach (about 6 oz)
  • ¼ cup red table wine (plus whatever you intend to drink)

Preparation

Heat oil in a large skillet over medium heat. Add garlic and sauté one minute. Add mushrooms and cook five to eight minutes, until mushrooms are tender. Add red wine. In a separate glass take a sip of wine. Add Insanity Ridge Picante Salsa and bring to a simmer. Add a handful of spinach, allow it to wilt, stir, repeat until desired amount is added. Salt and pepper to taste and serve.

Turnip or Cucumber Refrigerator Pickles

Ingredients

  • 1 bunch of turnip roots OR 1 lbs of cucumber
  • 4 cups white vinegar
  • 2 cups water
  • 6 tablespoons course salt
  • ½ cup sugar
  • ¼  to ½  cup chopped garlic cloves
  • ¼ to ½  cup fresh thyme, chopped or sprigs

Preparation a non-aluminum bowl mix the vinegar, water, salt and sugar until dissolved. Add garlic and herbs. Pour over chopped vegetables in a big jar or bowl that will fit, covered, in your refrigerator. Pickles will be ready in 3 days.

Recipe Ideas

For Mother’s Day Brunch…

 

Sausage & Asparagus Mini-Frittatas

 

Ingredients

  • 10 eggs
  • 1 bunch asparagus, washed and cut into ½” pieces
  • 1 tablespoon preferred herb
  • 1 tablespoon green garlic, minced
  • 1 package breakfast sausage
  • ½ cup shredded Marcoot cheese (Mozzarella or Heritage)

 

Preparation

Grease a muffin tin and preheat oven to 350 degrees.

In a skillet brown the sausage.  Once cooked through, set aside and cut into bite-sized pieces.

In same skillet, cook onion and garlic over medium heat for 2-3 minutes. Add the asparagus and cook for another 2-3 minutes. Stir in the sausage and set aside.

In a large bowl, whisk together all of the eggs and add salt and pepper to your taste.  Pour egg mixture into greased muffin tin, about ½ way up.

Add a large spoonful of sausage/vegetable mix to each muffin cup and sprinkle top with cheese.

Bake at 350 degrees for 10-12 minutes or until edges begin to turn light brown.

Blueberry Oatmeal

 

Ingredients

  • 1 cup rolled oats
  • 1 cup milk (cow, soy or almond)
  • 1 cup cup water
  • ½ cup frozen blueberries
  • Maple syrup, to taste
  • Pecan pieces, to taste

 

Preparation

Combine oats, milk and water in a medium pan. Turn the stove on medium to medium-high heat and bring to a boil. Reduce heat to low, add blueberries and simmer for 3-5 minutes, stirring occasionally until oatmeal reaches desired thickness.

Spoon oatmeal into a bowl, add maple syrup and pecans.

Rhubarb Salad

 

Ingredients

  • ⅓ lbs rhubarb, cut into 3/4-inch pieces
  • 2 tablespoons honey
  • ¼ cup pecan pieces
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar (preferably white)
  • ½ tablespoon of preferred herb
  • Coarse salt and ground pepper, to taste
  • 1 bag lettuce mix
  • ½ cup shredded asparagus
  • ¼ cup fresh mozzarella, shredded

 

Preparation

Preheat oven to 450 degrees, with racks in upper and lower thirds. On a rimmed baking sheet, toss rhubarb with honey. Roast on upper rack until beginning to soften, about 5 minutes. Let cool on baking sheet. On another rimmed baking sheet, toast pecans on lower rack until fragrant, about 5 minutes.

In a large bowl, whisk together oil and vinegar and season with herbs salt and pepper. Add lettuce, asparagus and toss to combine. Top with rhubarb, pecans and mozzarella.

Gooseberry Smoothie

Fruity, floral and a little bit tart, gooseberries are a quintessential summer fruit. The frozen gooseberries, blueberries and cherries at Maude’s Market come from Missouri Highland Farm located in Jamesville, MO.

Ingredients

  • 1 cup of gooseberries
  • ½ cup blueberries
  • ½ cherries or strawberries
  • ½ cup vanilla almond milk
  • ¾  cup Windcrest Dairy Vanilla Yogurt
  • 2 tbs Shane-Mills honey

 

Preparation

Put all ingredients into a blend and mix until the smoothie reaches its desired consistency.

Recipe Ideas

Pecan Crusted Trout with Kale Chips

Adapted from Food.Com by Food Snob St. Louis & Maude’s Market

Ingredients for Trout

  • 1 trout filet
  • 1/4 cup chopped pecans, toasted
  • 6 tablespoons cup bread crumbs
  • 1 tablespoon chopped fresh parsley
  • Salt & pepper, to taste
  • 1 & 1/2 tablespoons butter, room temperature

Preparation for Trout

Preheat oven to 450 degrees, and combine all ingredients except butter and trout to make breading.

Bush one side of the trout with softened butter. Sprinkle with pecan breading and press into fish to make sure it is fully and evenly coated on that side.

Line a baking sheet with parchment paper and brush with remaining butter.  Place fish, non-breaded side down on the baking sheet and bake for 8-10 minutes until fish is flaky.

Ingredients for Kale Chips

  • 1 bunch of kale, washed, stems removed, leaves chopped into large pieces
  • Olea Olive oil
  • Sea Salt, to taste

Preparation for Kale Chips

Preheat oven to 300 degrees and line a baking sheet with parchment paper.

Place kale in a large bowl and drizzle with oil and sprinkle with salt.  Toss until evenly coated.

Spread kale out evenly on baking sheet and bake for 15-20 minutes until crisp, stirring halfway through cooking time.

Recipe Ideas

Arugula Salad with Basil Vinaigrette

By Food Snob St. Louis, with input from Maude’s Market and adapted from Simply Recipes.

Ingredients for Dressing

2 oz. basil, chopped
1 teaspoon Sandhill Farm mustard
1 garlic scape, diced
1/2 teaspoon salt
1 teaspoon honey
1/4 cup white wine vinegar
3/4 cup Olea olive oil

Ingredients for Salad

1/4 lbs shiitake mushroom, sliced
1 large tomato, sliced
4 cups arugula
2-3 radishes, sliced

Preparation

To make the dressing, place all dressing ingredients except olive oil in a blender and blend on high until well blended (about 2 minutes). Remove lid and scrape down the sides.

Return the lid to the blender, turn on low speed and slowly drizzle in olive oil through hole in the lid.  Continue blending until all ingredients are pureed and well incorporated.

Saute the mushrooms in some of the dressing on medium-low heat for 5 minutes. Allow to cool.

To make the salad, put all ingredients in a large bowl, drizzle with dressing and toss. Serve alongside a grilled beef kabob or grilled tofu (you could marinate the tofu in some of the dressing prior to grilling).

Recipe Ideas

Kale Chips

Sauce Magazine just shared a recipe for kale chips. If you haven’t make these before, do. They are wonderful.

Braised Greens with
Garlic and Sun-dried Tomatoes

Ingredients

  • ¼ – ⅓ lbs chard, spinach or kale, sliced into strips
  • About 1 tbsp olive oil
  • 3-4 garlic cloves, diced
  • 4 chopped sun-dried tomatoes (soak in warm water for about 10 minutes)
  • ½ cup del Carmen vegetable broth
  • About ½ tbsp lemon juice

Preparation

Add olive oil and garlic to a skillet on medium heat, saute until garlic is translucent, add the sun-dried tomatoes, saute until tomatoes start to soften. Add the greens and stir as it wilts down (1 to 2 minutes). When the greens have wilted add the chicken broth and simmer until most of the liquid is gone (5-10 minutes). Add a dash of lemon juice and and serve on the side.

Tofu with Grilled Orange Chipotle Sauce

Ingredients for Grilled Orange Chipotle Sauce

  • 2 oranges, halved
  • Sorghum, as needed
  • 1 tbsp Sandhill Farm mustard
  • 1 chipotle pepper
  • 1 tbsp of olive oil
  • 1 garlic clove

Ingredients for Tofu and Veggies

  • 1 package tofu, excess water removed by pressing or patting dry, cut into ¼” thick pieces, any preferred style (triangles, strips, squares, etc)
  • 1 medium onion, sliced
  • 1 cup of Hilty green beans, drained
  • 1 Tbsp honey
  • Salt & Pepper to taste
  • Smoked Gouda (or any available Marcoot cheese) as needed
  • Gringo George tortilla chips

Preparation

Grease a skillet (oil, honey or lard). Spread a little sorghum on the cut side of the orange halves and grill, cut side down, on a skillet over medium heat until brown (about 3-4 minutes). Remove the oranges and allow them to cool

Drizzle honey salt and pepper over the onion and green beans and grill over medium-high heat until onions are browned.

Once cool, juice the oranges and add to a food processor. Add mustard, chipotle, olive oil, and garlic. Puree until smooth (add more olive oil if needed). Pour the mixture into a small baking dish.

Lay the tofu slices in the sauce and marinate 20 minutes.

Grill the marinated tofu about 4-5 minutes per side.

Lay tortilla chips on the skillet, top with green beans & onion, then tofu, the excess marinade and slices of cheese. Cover and heat over low heat until cheese melts (about 1 minute) then serve.

Jasmine & Citrus Rice

Ingredients

  • 1 cup water
  • ½ cup del Carmen vegetable broth
  • 1 cup jasmine rice
  • Juice of ½  grapefruit, mandarin or navel orange
  • Juice of ½ lemon

  • Zest of 1 small lemon
  • Ozark Forest soy sauce, to taste

Preparation

Bring water & vegetable broth to a boil in a saucepan. Stir in rice, cover and reduce heat, simmer for 20 minutes then add the remaining ingredients. Cook until rice is soft. Add more water or vegetable broth as necessary.

Sweet Potato & Apple Stir Fry

Ingredients

  • About 2 tablespoons oil
  • 1 cup Sweet Potato, halved or quartered and sliced about ¼” thick
  • ½ Onion, sliced ¼ to ½” width
  • Garlic, to taste, diced
  • 2-3 Arkansas Black Apples cored and diced
  • 1 cup Hilty Green Beans, drained
  • ⅓ cup Pecan Pieces, toasted
  • Ozark Forest soy sauce, to taste
  • Pepper, to taste
  • 2 cups Jasmine & Citrus Rice (see above)

Preparation

Heat oil in frying pan on medium heat. Add sweet potatoes and cook for 5 minutes. Add onions and garlic, cook for another 5 minutes. Add apples, green beans and pecans, a dash of soy sauce & pepper, stirring frequently for 5 minutes. Serve on Jasmine & Citrus rice.

Butternut Shepherd’s Pie

Ingredients

  • 1 can of Hilty butternut squash
  • ⅓ cup Windcrest plain Greek yogurt
  • 3 tablespoons butter
  • Garlic, to taste, minced
  • Salt & pepper, to taste
  • About 1 tablespoon oil
  • 1 package of Elixir Farm ground beef
  • ¾ cup Georgie Girl Relish, drained
  • ¾ cup Hilty canned tomatoes, drained

Preparation

Preheat oven to 425° F.

Mix butternut squash, yogurt, butter, garlic, salt & pepper into a mash.

Heat oil in a large skillet over medium-high heat. add the beef and cook, breaking it up and stir until browned. Stir in relish and tomatoes and cook for another 2-3 minutes.

Transfer the beef mixture to 4 individual baking dishes and top with the mashed butternut. Bake until golden brown, about 15 minutes.

Simple Steamed Sweet Potatoes

Ingredients

  • 1.25 lbs sweet potatoes, diced ½ inch pieces
  • ½ medium onion, sliced
  • 2-3 garlic cloves, chopped or pressed
  • Salt and pepper, to taste
  • 3 tbs olive oil
  • 2 tbs chopped pecans
  • 2 tbs fresh chopped rosemary or sage

Preparation

Fill bottom of steamer with about two inches of water. Once boiling steam the sweet potatoes and onions for about 6-8 minutes.

Transfer to a bowl and immediately toss with the remaining ingredients.

The Second Annual Sustainable Backyard Tour is a free, self-guided, open-house-style tour of sustainable outdoor spaces in and around St. Louis. The tour includes a range of green living practices such as rainwater harvesting, composting, keeping chickens, bees, or goats, using renewable energy, permeable surfaces, recycled art and more.

Maude’s Market is a sponsor and featured on the tour. This is the third summer we have worked on the design and layout of our garden adjacent to the Market. Currently, the garden consists of these features:

  • A permaculture garden with heirloom fruits and vegetables from Baker Creek. This produce will be available for sale in the Market this summer.
  • A solar-powered Electric Fertilizer experiment
  • Hay bale compost bins
  • Rain barrels
  • A honey bee hive
  • A variety of native plants for food and housing to attract native pollinators


We will also offer samples of cold iced tea from Traveling Tea and a restroom is available for Sustainable Backyard participants. We look forward to seeing you!

Recipe Ideas

Poached Duck Egg Dish

Ingredients

  • Bacon (optional)
  • Butter (optional)
  • Sweet onion sliced in half (1 half per person)
  • Green beans (¼ lbs per person)
  • Duck eggs (1 per person)
  • 1 to 2 tsp rice vinegar (helps hold egg together, omit if you don’t like the taste)
  • Salt & pepper (to taste)

Directions

Always Optional Bacon

  • Pan fry bacon in your prefered method. You will cook the onion and green beans in the bacon fat left over in the pan.

Poach the Eggs

  • Bring water in a shallow saucepan to almost boiling (if the water is already boiling, lower the heat until it is no longer boiling), add one or two teaspoons of vinegar.
  • Crack each egg into a small cup, then place the cup near the surface of the hot water and gently drop the egg into the water. With a spoon, nudge the egg whites closer to their yolks to help hold the egg whites together. Alternatively, place a mason jar ring at the bottom of the saucepan, drop the egg over the mason jar ring and let it settle in the ring.
  • Turn off the heat. Cover. Let sit for 4 minutes, until the egg whites are cooked.
  • Lift eggs out of pan with a slotted spoon.

Prepare the Veggies as Eggs Poach

  • In the pan with bacon fat (if not cooking bacon, heat butter to) fry the onion (about 2 minutes on each side) and green beans (about 4 minutes total, stirring every minute).


Grilled Peaches Dressed in Yogurt

Ingredients

  • 4 medium ripe peaches, cut in half (pit removed)
  • 1/2 cup Greek yogurt (plain or vanilla)
  • 4 tbsp honey
  • Cinnamon (to taste)

Directions

  • Place peaches, cut side down, on the grill. Grill on low or indirect heat until soft, about 2-4 minutes on each side.
  • Combine yogurt, honey and cinnamon. Pour 1 tbsp yogurt over each peach half. Drizzle with honey and enjoy.

Warm Mushroom Salad With Feta

Ingredients

 

  • Olive oil, about 3 tbsps
  • Mushrooms ½ lbs
  • Garlic scape, chopped, 1
  • Fresh thyme, chopped, about 2 tbsps
  • Lemon juice, about ½ a lemon
  • Salt & pepper, to taste
  • Lettuce, shredded, 1 head
  • Tomato diced, about ½ a large hot house tomato
  • Cucumber diced, about ½ a cucumber
  • Sweet onion, diced, about ¼ an onion
  • Goatsbeard Farm feta cheese, crumbled

Directions

 

  • Heat the oil in a large frying pan, add the mushrooms and sauté over a high heat for 5 mins stirring occasionally. Add the garlic scape, thyme and lemon juice and seasoning to taste, stir well then remove from the heat.
  • Arrange the lettuce in a large bowl, scatter the remaining ingredients over the lettuce, then add the mushrooms and all the pan juices. Toss to mix and serve with crusty Companion bread.

 

Mozzarella-Stuffed Turkey Meatballs

Ingredients

 

  • Ground turkey, 1 lbs
  • Sweet onion, finely chopped, aout 1 cup
  • Garlic scape, minced, 2
  • Duck egg, 1
  • Bread crumbs, 1 cup
  • Marcoot cave aged heritage cheese, grated, ½ cup
  • Fresh parsley, chopped, ½ cup
  • Fresh basil, chopped, ⅛ cup
  • Olive oil, ⅛ cup
  • Milk, ¼ cup
  • Salt & pepper, to taste
  • Marcoot Jersey Creamery mozzarella, diced ¼ to ½ inch cubes

 

Directions

 

  • Preheat an oven to 375 degrees F
  • Place the ground turkey, onion, garlic, egg, bread crumbs, cave aged heritage cheese, parsley, basil, olive oil, milk, salt, and black pepper in a bowl. Mix until evenly blended, then form into 1 ½ to 2 inch meatballs. Make a hole in the meatball with your finger and place a mozzarella cube in the hole. Seal the meatball around the cheese and place on a nonstick baking sheet. Drizzle more olive oil over the meatballs.
  • Bake for 30 minutes or until the meatballs are no longer pink in the center.
  • Serve with your favorite marinara sauce and on Midwest Pasta.
