Recipe Ideas

Mushrooms and Spinach
Sautéed in Red Wine

Ingredients

  • 2 tsp Olea olive oil
  • Pinch of Adventures in Spice Insanity Ridge Picante Salsa
  • 2 cups shiitake mushrooms, cleaned of visible dirt and sliced
  • 2 garlic scapes, minced
  • 3 to 4 large handfuls of fresh spinach (about 6 oz)
  • ¼ cup red table wine (plus whatever you intend to drink)

Preparation

Heat oil in a large skillet over medium heat. Add garlic and sauté one minute. Add mushrooms and cook five to eight minutes, until mushrooms are tender. Add red wine. In a separate glass take a sip of wine. Add Insanity Ridge Picante Salsa and bring to a simmer. Add a handful of spinach, allow it to wilt, stir, repeat until desired amount is added. Salt and pepper to taste and serve.

Turnip or Cucumber Refrigerator Pickles

Ingredients

  • 1 bunch of turnip roots OR 1 lbs of cucumber
  • 4 cups white vinegar
  • 2 cups water
  • 6 tablespoons course salt
  • ½ cup sugar
  • ¼  to ½  cup chopped garlic cloves
  • ¼ to ½  cup fresh thyme, chopped or sprigs

Preparation a non-aluminum bowl mix the vinegar, water, salt and sugar until dissolved. Add garlic and herbs. Pour over chopped vegetables in a big jar or bowl that will fit, covered, in your refrigerator. Pickles will be ready in 3 days.

Recipe Ideas

For Mother’s Day Brunch…

 

Sausage & Asparagus Mini-Frittatas

 

Ingredients

  • 10 eggs
  • 1 bunch asparagus, washed and cut into ½” pieces
  • 1 tablespoon preferred herb
  • 1 tablespoon green garlic, minced
  • 1 package breakfast sausage
  • ½ cup shredded Marcoot cheese (Mozzarella or Heritage)

 

Preparation

Grease a muffin tin and preheat oven to 350 degrees.

In a skillet brown the sausage.  Once cooked through, set aside and cut into bite-sized pieces.

In same skillet, cook onion and garlic over medium heat for 2-3 minutes. Add the asparagus and cook for another 2-3 minutes. Stir in the sausage and set aside.

In a large bowl, whisk together all of the eggs and add salt and pepper to your taste.  Pour egg mixture into greased muffin tin, about ½ way up.

Add a large spoonful of sausage/vegetable mix to each muffin cup and sprinkle top with cheese.

Bake at 350 degrees for 10-12 minutes or until edges begin to turn light brown.

Blueberry Oatmeal

 

Ingredients

  • 1 cup rolled oats
  • 1 cup milk (cow, soy or almond)
  • 1 cup cup water
  • ½ cup frozen blueberries
  • Maple syrup, to taste
  • Pecan pieces, to taste

 

Preparation

Combine oats, milk and water in a medium pan. Turn the stove on medium to medium-high heat and bring to a boil. Reduce heat to low, add blueberries and simmer for 3-5 minutes, stirring occasionally until oatmeal reaches desired thickness.

Spoon oatmeal into a bowl, add maple syrup and pecans.

Rhubarb Salad

 

Ingredients

  • ⅓ lbs rhubarb, cut into 3/4-inch pieces
  • 2 tablespoons honey
  • ¼ cup pecan pieces
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar (preferably white)
  • ½ tablespoon of preferred herb
  • Coarse salt and ground pepper, to taste
  • 1 bag lettuce mix
  • ½ cup shredded asparagus
  • ¼ cup fresh mozzarella, shredded

 

Preparation

Preheat oven to 450 degrees, with racks in upper and lower thirds. On a rimmed baking sheet, toss rhubarb with honey. Roast on upper rack until beginning to soften, about 5 minutes. Let cool on baking sheet. On another rimmed baking sheet, toast pecans on lower rack until fragrant, about 5 minutes.

In a large bowl, whisk together oil and vinegar and season with herbs salt and pepper. Add lettuce, asparagus and toss to combine. Top with rhubarb, pecans and mozzarella.

Gooseberry Smoothie

Fruity, floral and a little bit tart, gooseberries are a quintessential summer fruit. The frozen gooseberries, blueberries and cherries at Maude’s Market come from Missouri Highland Farm located in Jamesville, MO.

Ingredients

  • 1 cup of gooseberries
  • ½ cup blueberries
  • ½ cherries or strawberries
  • ½ cup vanilla almond milk
  • ¾  cup Windcrest Dairy Vanilla Yogurt
  • 2 tbs Shane-Mills honey

 

Preparation

Put all ingredients into a blend and mix until the smoothie reaches its desired consistency.

Recipe Ideas

Pecan Crusted Trout with Kale Chips

Adapted from Food.Com by Food Snob St. Louis & Maude’s Market

Ingredients for Trout

  • 1 trout filet
  • 1/4 cup chopped pecans, toasted
  • 6 tablespoons cup bread crumbs
  • 1 tablespoon chopped fresh parsley
  • Salt & pepper, to taste
  • 1 & 1/2 tablespoons butter, room temperature

Preparation for Trout

Preheat oven to 450 degrees, and combine all ingredients except butter and trout to make breading.

Bush one side of the trout with softened butter. Sprinkle with pecan breading and press into fish to make sure it is fully and evenly coated on that side.

Line a baking sheet with parchment paper and brush with remaining butter.  Place fish, non-breaded side down on the baking sheet and bake for 8-10 minutes until fish is flaky.

Ingredients for Kale Chips

  • 1 bunch of kale, washed, stems removed, leaves chopped into large pieces
  • Olea Olive oil
  • Sea Salt, to taste

Preparation for Kale Chips

Preheat oven to 300 degrees and line a baking sheet with parchment paper.

Place kale in a large bowl and drizzle with oil and sprinkle with salt.  Toss until evenly coated.

Spread kale out evenly on baking sheet and bake for 15-20 minutes until crisp, stirring halfway through cooking time.

Menu Notes & Recipe Ideas

How to Handle Nettles

Use the plastic bag, a paper towel or tongs to handle your nettles, rather than your hands, otherwise you may receive a bit of a sting. After cooking, nettles produce an entirely sting-free and delicious eating experience, reminiscent of spinach but more floral and earthy.

This wild native has a lot of iron, potassium, manganese, calcium, vitamin A and C, and are also a decent source of protein. Many cultures use nettles as a medicinal herb to treat arthritis, anemia, hay fever and kidney problems, among other ailments. Dried leaves may be used to make a tea that is useful in alleviating allergy symptoms.

Drying

Remove the leaves from the stem (to ensure even drying) and rinse them in a colander. Place the leaves on a baking dish on the lowest shelf, at the lowest temperature (about 200 degrees). Check every 5 minutes until dry. Store in a plastic ziplock bag and use in tea to add strong ‘green’ flavor.

Cooking

Rinse the plant in a colander. Plunge the leaves into a pot of boiling water for 1-2 minutes and you’ll be left with a sleek, slick pile of vivid green leaves.

Nettle Pesto

Ingredients

  • 6-8 tablespoons cooked, chopped nettles
  • 2-3 garlic cloves or 2-3 green garlic plants
  • 2 tablespoons pecan pieces, toasted
  • 2 tablespoons grated Marcoot Heritage cheese
  • Salt & pepper, to taste
  • Olive oil, as needed

Preparation

In a food processor or blender add the nettles, garlic, pecans, cheese, a bit of olive oil (start with 2 tablespoons), salt and pepper to taste. Blend. Add more olive oil to obtain the desired consistency.

Can be stored in the fridge for a week or frozen. Excellent as a spread or dressing to add punch to dishes with simple flavors think trout (which we will get in the CSA next week), bread & pasta, and sunchokes.

What to do with Sunchokes

No need to peel the thin skin of a sunchoke. Related to the sunflower, these tubers are an excellent source of iron and have a fresh, nutty flavor. To prepare, just slice to desired size, eat raw in a salad, steam, saute or roast in the oven with olive oil and your favorite herbs, salt & pepper.

Arugula Salad with Basil Vinaigrette

By Food Snob St. Louis, with input from Maude’s Market and adapted from Simply Recipes.

Ingredients for Dressing

2 oz. basil, chopped
1 teaspoon Sandhill Farm mustard
1 garlic scape, diced
1/2 teaspoon salt
1 teaspoon honey
1/4 cup white wine vinegar
3/4 cup Olea olive oil

Ingredients for Salad

1/4 lbs shiitake mushroom, sliced
1 large tomato, sliced
4 cups arugula
2-3 radishes, sliced

Preparation

To make the dressing, place all dressing ingredients except olive oil in a blender and blend on high until well blended (about 2 minutes). Remove lid and scrape down the sides.

Return the lid to the blender, turn on low speed and slowly drizzle in olive oil through hole in the lid.  Continue blending until all ingredients are pureed and well incorporated.

Saute the mushrooms in some of the dressing on medium-low heat for 5 minutes. Allow to cool.

To make the salad, put all ingredients in a large bowl, drizzle with dressing and toss. Serve alongside a grilled beef kabob or grilled tofu (you could marinate the tofu in some of the dressing prior to grilling).

  • 3-4 garlic cloves, diced
  • 4 chopped sun-dried tomatoes (soak in warm water for about 10 minutes)
  • ½ cup del Carmen vegetable broth
  • About ½ tbsp lemon juice

Preparation

Add olive oil and garlic to a skillet on medium heat, saute until garlic is translucent, add the sun-dried tomatoes, saute until tomatoes start to soften. Add the greens and stir as it wilts down (1 to 2 minutes). When the greens have wilted add the chicken broth and simmer until most of the liquid is gone (5-10 minutes). Add a dash of lemon juice and and serve on the side.

Tofu with Grilled Orange Chipotle Sauce

Ingredients for Grilled Orange Chipotle Sauce

  • 2 oranges, halved
  • Sorghum, as needed
  • 1 tbsp Sandhill Farm mustard
  • 1 chipotle pepper
  • 1 tbsp of olive oil
  • 1 garlic clove

Ingredients for Tofu and Veggies

  • 1 package tofu, excess water removed by pressing or patting dry, cut into ¼” thick pieces, any preferred style (triangles, strips, squares, etc)
  • 1 medium onion, sliced
  • 1 cup of Hilty green beans, drained
  • 1 Tbsp honey
  • Salt & Pepper to taste
  • Smoked Gouda (or any available Marcoot cheese) as needed
  • Gringo George tortilla chips

Preparation

Grease a skillet (oil, honey or lard). Spread a little sorghum on the cut side of the orange halves and grill, cut side down, on a skillet over medium heat until brown (about 3-4 minutes). Remove the oranges and allow them to cool

Drizzle honey salt and pepper over the onion and green beans and grill over medium-high heat until onions are browned.

Once cool, juice the oranges and add to a food processor. Add mustard, chipotle, olive oil, and garlic. Puree until smooth (add more olive oil if needed). Pour the mixture into a small baking dish.

Lay the tofu slices in the sauce and marinate 20 minutes.

Grill the marinated tofu about 4-5 minutes per side.

Lay tortilla chips on the skillet, top with green beans & onion, then tofu, the excess marinade and slices of cheese. Cover and heat over low heat until cheese melts (about 1 minute) then serve.

Baked Salmon with Irish Gooseberry Sauce

Serve this recipe with lightly sauteed mushrooms and greens on the side.

Ingredients

  • 1 small salmon fillet, thawed
  • Salt & pepper to taste
  • Olive oil, as needed
  • Dash of dry white wine
  • ¼ Onion, sliced

For the sauce:

  • 2 tablespoon of plain Greek yogurt
  • 2 tablespoon lightly sweetened with honey or sugar, cooked gooseberries
  • Dash of Ozark Forest elderflower cordial

Preparation

Heat the oven to 350°F.

Rinse the fish season with salt and pepper.

Place foil on a baking sheet and brush with olive oil. Put the fish in the middle, add the onions, splash with wine & wrap the fish in the foil. Bake in the middle of the oven for 10 minutes, then remove and leave to cool in its foil.

For the sauce, put the yogurt and gooseberries in a bowl and mix, adding elderflower cordial to taste. Season with salt and pepper, and more sweetener, if needed.

Serve the sauce on top of the fish.

Sharing the bounty: CSA patrons enjoy a different kind of agriculture

Some entrepreneurs have linked the idea of grocery shopping with a CSA. On the city’s south side, Maude Bauschard runs Maude’s Market, a cozy shop of less than 600 square feet on Virginia Avenue that combines storefront retail with the CSA concept.

Lunching on fruit among shelves full of everything from moisturizing cream to maple syrup, Bauschard said that Maude’s is unusual in that it sells CSA subscriptions but also takes walk-in customers off the street.

“Everything is locally produced except for the citrus that I’m eating right now,” she said.

Bauschard noted that the CSA concept has existed since the 1970s but has more recently come into its own. She said it exploded in recent years but seems to have leveled off a bit.

“For the customers, it is a great thing because they are pretty much guaranteed to get some sort of crop or product,” she said of Maude’s combined CSA dynamic. “We had a major drought last summer and it was hard across the board. But I was able to find various products that did survive. At the same time, the customer is able to support multiple small family farms.”

Maude’s CSA offers a weekly supply of produce, meat, a staple and a “treat.” There are also pork-free, gluten-free and vegetarian options available.

She said CSAs help to boost demand for local crops so that land isn’t used to produce corn or soybeans for animal food or fuel.

Carmelita Nunez, a Maude’s subscriber since the former moved to Dutchtown two years ago, said she thinks the food is better when it hasn’t been artificially ripened or bred for size.

“When things aren’t treated to grow larger, they taste different,” said the 38-year-old. “If something gets too big, it loses its flavor and gets kind of mealy. When things are allowed to just grow as they naturally would, the taste is more condensed and sweeter.”

Jasmine & Citrus Rice

Ingredients

  • 1 cup water
  • ½ cup del Carmen vegetable broth
  • 1 cup jasmine rice
  • Juice of ½  grapefruit, mandarin or navel orange
  • Juice of ½ lemon

  • Zest of 1 small lemon
  • Ozark Forest soy sauce, to taste

Preparation

Bring water & vegetable broth to a boil in a saucepan. Stir in rice, cover and reduce heat, simmer for 20 minutes then add the remaining ingredients. Cook until rice is soft. Add more water or vegetable broth as necessary.

Sweet Potato & Apple Stir Fry

Ingredients

  • About 2 tablespoons oil
  • 1 cup Sweet Potato, halved or quartered and sliced about ¼” thick
  • ½ Onion, sliced ¼ to ½” width
  • Garlic, to taste, diced
  • 2-3 Arkansas Black Apples cored and diced
  • 1 cup Hilty Green Beans, drained
  • ⅓ cup Pecan Pieces, toasted
  • Ozark Forest soy sauce, to taste
  • Pepper, to taste
  • 2 cups Jasmine & Citrus Rice (see above)

Preparation

Heat oil in frying pan on medium heat. Add sweet potatoes and cook for 5 minutes. Add onions and garlic, cook for another 5 minutes. Add apples, green beans and pecans, a dash of soy sauce & pepper, stirring frequently for 5 minutes. Serve on Jasmine & Citrus rice.

Butternut Shepherd’s Pie

Ingredients

  • 1 can of Hilty butternut squash
  • ⅓ cup Windcrest plain Greek yogurt
  • 3 tablespoons butter
  • Garlic, to taste, minced
  • Salt & pepper, to taste
  • About 1 tablespoon oil
  • 1 package of Elixir Farm ground beef
  • ¾ cup Georgie Girl Relish, drained
  • ¾ cup Hilty canned tomatoes, drained

Preparation

Preheat oven to 425° F.

Mix butternut squash, yogurt, butter, garlic, salt & pepper into a mash.

Heat oil in a large skillet over medium-high heat. add the beef and cook, breaking it up and stir until browned. Stir in relish and tomatoes and cook for another 2-3 minutes.

Transfer the beef mixture to 4 individual baking dishes and top with the mashed butternut. Bake until golden brown, about 15 minutes.

Grapefruit & Pappy’s Gourmet Jelly on
Acorn Squash

Adapted from Mother Earth Living

Ingredients

  • 1 acorn squash
  • 2 pink grapefruit
  • 2 tablespoons of preferred Pappy’s Gourmet Jelly
  • 2 tablespoons pecan pieces

Preparation

Preheat the oven to 375°F. Wash the squash, place it in a shallow baking pan, and bake whole for 30 minutes. Turn the squash over and prick the top several times with a fork; bake for another 30 minutes.

While the squash cooks, prepare the grapefruit. Using a sharp knife, cut the peel and completely remove the layers of membrane from each (see how to do so here). Place in a small bowl and stir the jelly into the grapefruit and set aside.

In a small pan, quickly toast the nuts over medium-low heat until browned. Set aside.

Remove the squash from the oven and let cool. Cut it in half, remove the seeds and strings. Then cut each half into two pieces (4 pieces total). Place the sections back in the baking dish and top with the grapefruit & jelly mixture and toasted pecans. Heat through and serve.
