Recipe Ideas

Pecan Crusted Trout with Kale Chips

Adapted from Food.Com by Food Snob St. Louis & Maude’s Market

Ingredients for Trout

  • 1 trout filet
  • 1/4 cup chopped pecans, toasted
  • 6 tablespoons cup bread crumbs
  • 1 tablespoon chopped fresh parsley
  • Salt & pepper, to taste
  • 1 & 1/2 tablespoons butter, room temperature

Preparation for Trout

Preheat oven to 450 degrees, and combine all ingredients except butter and trout to make breading.

Bush one side of the trout with softened butter. Sprinkle with pecan breading and press into fish to make sure it is fully and evenly coated on that side.

Line a baking sheet with parchment paper and brush with remaining butter.  Place fish, non-breaded side down on the baking sheet and bake for 8-10 minutes until fish is flaky.

Ingredients for Kale Chips

  • 1 bunch of kale, washed, stems removed, leaves chopped into large pieces
  • Olea Olive oil
  • Sea Salt, to taste

Preparation for Kale Chips

Preheat oven to 300 degrees and line a baking sheet with parchment paper.

Place kale in a large bowl and drizzle with oil and sprinkle with salt.  Toss until evenly coated.

Spread kale out evenly on baking sheet and bake for 15-20 minutes until crisp, stirring halfway through cooking time.

Menu Notes & Recipe Ideas

How to Handle Nettles

Use the plastic bag, a paper towel or tongs to handle your nettles, rather than your hands, otherwise you may receive a bit of a sting. After cooking, nettles produce an entirely sting-free and delicious eating experience, reminiscent of spinach but more floral and earthy.

This wild native has a lot of iron, potassium, manganese, calcium, vitamin A and C, and are also a decent source of protein. Many cultures use nettles as a medicinal herb to treat arthritis, anemia, hay fever and kidney problems, among other ailments. Dried leaves may be used to make a tea that is useful in alleviating allergy symptoms.

Drying

Remove the leaves from the stem (to ensure even drying) and rinse them in a colander. Place the leaves on a baking dish on the lowest shelf, at the lowest temperature (about 200 degrees). Check every 5 minutes until dry. Store in a plastic ziplock bag and use in tea to add strong ‘green’ flavor.

Cooking

Rinse the plant in a colander. Plunge the leaves into a pot of boiling water for 1-2 minutes and you’ll be left with a sleek, slick pile of vivid green leaves.

Nettle Pesto

Ingredients

  • 6-8 tablespoons cooked, chopped nettles
  • 2-3 garlic cloves or 2-3 green garlic plants
  • 2 tablespoons pecan pieces, toasted
  • 2 tablespoons grated Marcoot Heritage cheese
  • Salt & pepper, to taste
  • Olive oil, as needed

Preparation

In a food processor or blender add the nettles, garlic, pecans, cheese, a bit of olive oil (start with 2 tablespoons), salt and pepper to taste. Blend. Add more olive oil to obtain the desired consistency.

Can be stored in the fridge for a week or frozen. Excellent as a spread or dressing to add punch to dishes with simple flavors think trout (which we will get in the CSA next week), bread & pasta, and sunchokes.

What to do with Sunchokes

No need to peel the thin skin of a sunchoke. Related to the sunflower, these tubers are an excellent source of iron and have a fresh, nutty flavor. To prepare, just slice to desired size, eat raw in a salad, steam, saute or roast in the oven with olive oil and your favorite herbs, salt & pepper.

Recipe Ideas

Arugula Salad with Basil Vinaigrette

By Food Snob St. Louis, with input from Maude’s Market and adapted from Simply Recipes.

Ingredients for Dressing

2 oz. basil, chopped
1 teaspoon Sandhill Farm mustard
1 garlic scape, diced
1/2 teaspoon salt
1 teaspoon honey
1/4 cup white wine vinegar
3/4 cup Olea olive oil

Ingredients for Salad

1/4 lbs shiitake mushroom, sliced
1 large tomato, sliced
4 cups arugula
2-3 radishes, sliced

Preparation

To make the dressing, place all dressing ingredients except olive oil in a blender and blend on high until well blended (about 2 minutes). Remove lid and scrape down the sides.

Return the lid to the blender, turn on low speed and slowly drizzle in olive oil through hole in the lid.  Continue blending until all ingredients are pureed and well incorporated.

Saute the mushrooms in some of the dressing on medium-low heat for 5 minutes. Allow to cool.

To make the salad, put all ingredients in a large bowl, drizzle with dressing and toss. Serve alongside a grilled beef kabob or grilled tofu (you could marinate the tofu in some of the dressing prior to grilling).

Pea Shoot & Pecan Pesto

Ingredients

Preparation

Place the pecans in a pan and toast gently until slightly colored. Do not leave unattended as the nuts brown quickly. Place the garlic and pea shoots in a blender and process until smooth. Add the toasted pecans and blend briefly. Turn the pea shoot mixture into a bowl then add the cheese. Gradually add the olive oil until you have reached your preferred  consistency. Season with salt and pepper.

Blueberry Cajun Chicken

Ingredients

  • Adventures in Spice Cajun Seasoning, to taste
  • 5 Pack of chicken drumsticks from Cock & Bull Farm
  • Garlic cloves, to taste, finely chopped
  • ½ medium onion, finely chopped
  • Olea olive oil, as needed
  • ⅓ cup red wine
  • 2 cups frozen blueberries
  • 1 teaspoon fresh grated lemon rind
  • Salt & pepper, to taste

Preparation

Rub the drum sticks with the Cajun Seasoning and saute the drumsticks in olive oil, over medium heat, until brown and almost cooked through, remove from pan and keep warm in the oven (the chicken will continue to cook while preparing the sauce, but won’t become dry).

In the same pan used to cook the chicken, saute the garlic and onion until transparent. Add the red wine and cook down until most of the liquid is evaporated. Add the blueberries, lemon rind, salt and pepper. Simmer until berries are heated through. Let the mixture sit for five minutes with the heat off so the for flavors will blend together.

Spoon over the drumsticks and serve.

Recipe Ideas

Tasty, But Fake, Sausage Gumbo

Ingredients

  • ¼ cup vegetable oil
  • ⅓ cup Maude’s Market whole wheat flour
  • ½ cup diced onion
  • ½ cup diced carrot
  • 1 cups thinly sliced sausage (about 3-4 sausages)
  • 4 Hilty canned tomatoes, chopped
  • 1 container of del Carmen vegetable stock (about 64 oz)
  • 4 bay leaves
  • 4 garlic cloves finely chopped garlic
  • 2 teaspoons Adventures in Spice Cajun Seasoning
  • salt, to taste
  • 2 cups of cooked rice

Preparation

Combine oil and flour in a large stock pot. Cook over medium-high to high heat, stirring constantly, until mixture turns the color of milk chocolate, about 20 minutes. Watch carefully, preventing the mixture from burning. Add onion and carrot, and cook over medium-high heat until tender. Stir in sausage and tomatoes. Combine well. Pour in vegetable stock. Add bay leaves and garlic. Bring to boil, then add Cajun Seasoning. Reduce heat to low and simmer 20 to 30 minutes. Adjust seasoning with salt to taste.

Sever on top of cooked rice.

Poached Trout on Butterhead Lettuce
with Steamed Shiitakes

Ingredients

  • 1 medium onion, cut in half and sliced thin
  • 6-12 fresh shiitake mushrooms, sliced medium thick, stems removed
  • Water, as needed
  • 1 trout fillet, cut in half
  • del Carmen defrosted vegetable broth, as needed
  • ½ butterhead lettuce leaves, ripped to desired size

Dressing Ingredients

  • 1 tablespoon fresh lemon juice
  • 3 medium cloves garlic, pressed
  • 1 tablespoon Ozark Forest shiitake mushroom soy sauce
  • 1 tablespoon Olea Extra Virgin Olive Oil
  • salt and pepper, to taste

Preparation

Mix together lemon juice, soy sauce, olive oil, salt and pepper in a small bowl, set aside

Bring about 1 to 2″ of water to a boil in a steamer pot or saucepan with a lid and steam mushrooms and onions together for about 5 minutes.

To poach the trout, use a shallow pan with a cover and placing enough vegetable broth to just cover the fish. Bring to a boil then reduce the heat to a fast simmer. Add the trout to the simmering pan of vegetable broth and cook for about 5 minutes.

Using a slotted spoon, lift the trout from the broth, and place on a plate lined with butterhead lettuce. Remove the mushrooms and onions from the steamer and toss with the dressing. Place on top of the trout.

Garlicky Squash Stuffed with Turkey*

Ingredients

  • Peeled garlic cloves (whole), to taste
  • Olive oil, as needed
  • Squash
  • ½ pound beets, thin & long julienne cut
  • 1 large yellow onion, diced small
  • 1 pound ground turkey (veggie substitute, beans & rice, beans & quinoa, or pressed tofu flavored to your preference)
  • 1 teaspoon chopped sage
  • Pinch of ground nutmeg
  • Pinch of cayenne
  • Salt & Pepper, to taste
  • ¼ cup finely grated Marcoot Heritage cheese
  • ¾ cup grated Marcoot Gouda cheese

Directions

Preheat oven to 350. Combine the garlic cloves and the oil in a small ramekin or oven-safe dish. Place in oven and bake 30 to 45 minutes or until the cloves are starting to turn golden brown in spots. Remove from oven and set aside.

Wash the squash and cut it lengthwise, through the middle. Place the squash halves cut side down onto an oiled baking sheet and place in oven, 25 to 30 minutes or until the squash gives a little when squeezed. Remove from oven, flip the squash so they’re cut side up, and set aside until cool enough to handle.

Steam the julienne beets for 5-10 minutes until soft, and set aside.

Heat olive oil in a large soup pot over medium high heat. Add diced onion and sauté about 3 minutes or until onion has softened a bit. Add ground turkey, herbs and seasonings. Stir and cook until browned. Remove from heat and stir in Heritage cheese. Remove roasted garlic from oil with a slotted spoon and add to mixture. The filling should be a little bit wet to help keep the squash moist when baking.

Brush the squash cavity with a light coating of the roasted garlic oil. Divide the filling evenly among the halves. Top with the steamed beets and the grated Gouda.

Cover and return to oven for 20 to 30 minutes or until cheese is melted and everything is heated through.

Recipe Idea

Ingredients
2 tablespoons olive oil
1 medium onions, peeled and chopped
1 green bell peppers, seeded and chopped
1 red bell peppers, seeded and chopped
1 garlic cloves, peeled and minced
1 (10 ounce) cans Rotel tomatoes & chilies, undrained
1 (29 ounce) cans black beans, drained and rinsed
1 cup whole wheat elbow macaroni
4 cups vegetable broth
1 teaspoon cumin ( or to taste)
sour cream ( garnish)
extra-sharp cheddar cheese, shredded ( garnish)
tortilla chips ( garnish)

Directions
Saute the green and red bell peppers, onion, and garlic in olive oil over medium heat until softened, about 6-8 minutes. In a separate sauce pot, bring salted water to a boil and cook the elbow macaroni according to the package directions. Drain, return to pot, and mix with a little olive oil to prevent sticking. Add broth, beans, and Rotel diced tomatoes and chiles to the onion/bell pepper mixture. Season with cumin and simmer for 10-15 minutes. Just before serving, add cooked elbow macaroni to the soup. Garnish individual bowls of soup with shredded cheddar cheese, crushed tortilla chips and a dollop of sour cream.

Scrambled Tofu

Ingredients

  • Olive Oil
  • Peppers, deseeded & diced (I suggest using our bell or banana peppers and adding jalapeno or habanero peppers for additional flavor)
  • 1 package, firm Mofu tofu, drained (not pressed) and crumbled into chunks
  • Tomatoes, diced
  • Salt & pepper

Directions

Heat a few tablespoons of olive oil in a large frying pan. Add peppers and cook for a  few  minutes until soft. Add tofu, breaking it up as you stir. Cook for a few minutes until warm, add tomatoes salt and pepper. Continue and stir for a few more minutes until everything is hot and the tofu is well scrambled.\
