Spring Greens & Veggies
You can’t go wrong with beautiful leafy greens. Some greens are surprising sources of bone-building fat burning mineral calcium. Others contain folic acid, a nutrient that helps maintain cardiovascular health and may battle depression. Almost all greens contain vitamin C to keep your immune system going strong, and fiber to reduce cholesterol.
What’s New
Spring Greens & Veggies
- Spinach, Theiss Farm and Greenhouse – $1.90 / lbs
Spinach is rich in vitamin K, calcium, phosphorus, potassium, zinc and even selenium, which may help protect the liver and reduce the risk of Alzheimer’s. A study in the Journal of Nutrition suggests that spinach can kill prostate cancer cells. Incorporate more spinach into your diet by swapping your iceberg lettuce on sandwiches and salads to spinach.

Wild mushrooms like Shiitake are rich in ergothione, an antioxidant that protects cells from abnormal growth and replication, and therefore may reduce the risk of cancer. Even better, cooking mushrooms in red wine magnifies their immunity boosting potential. Incorporate more mushrooms into your diet by chopping them into soups, salads, and pasta dishes, or brush them with olive oil and grill (see recipe suggestion below).
